To find a good Char Kwoy Teow in the northern region of Perth is not easy. This afternoon, Cliff, my friend and a frequent patron, brought me to 'Hawkers Delight Malaysian Cuisine' at Wanneroo Market for food discovery. From him, I learned to order Char Kwoy Teow with 1st degree of Char (very high flame on wok) to roast the flipping flat rice noodles with extremely high heat. And that has caused an amazing 'Holy Smoke'. It's impossible for me to use my small kitchen stove to achieve it. A commercial grade high flame type stove can only give you that large quantity of big fire. Voila! Done! The char kwoy teow smelled good, tasted good and nice to bite. What amazed me was that the second generation of this new chef could customize the cooking according to the degree of 'char', sweet or saltiness you desire for. Blessed to those who live in the north of Perth eh to enjoy the food nearby. Oh, forgot to tell you, one of the secrets of this dish is the finishing touch with frying together the ingredients of the Trinity: 'deep fried shredded pork fat', Chinese sausage and prawns.
