When, as in our case, you arrive in Bejes without a special plan, after returning from the incredible track that goes up almost up the mountain, one of the places where you look is in, attached to the Alles cheese factory, the Cheese interpretation center. It took us a bit to find Luis Alberto, its owner and guide at the cheese interpretation center, which includes the cheese factory facilities. But then everything was easy Luis told us about the problems that cheese makers have to find milk in the area, where there are fewer and fewer farmers, being forced to bring milk from other places. He also told us about the problems of farmers with wolves and bears, protected species in the natural park. He explained the recent traceability measures of milk and cheese. In spite of not being cheese making day, it was clear to all of us how the process was and we could see some cheeses in the drying process in the chamber. After tasting the different types of cheese that are made in this cheese factory and making the purchase of some varieties of cheese we say goodbye to Luis and Bejes. We will buy Alles cheese again
