It would be wise to isolate fresh meat, smoked meat and avoid taking the same knives, without washing them to cut both fresh and smoked meats indifferently. For my part roast beef and rack of lamb had a very pronounced taste of smoked meat, the price taking into account the remarks mentioned above seems very prohibitive. I'm not saying goodbye to you, because I won't be setting foot in your butcher's shop again.
