Artisan vinegar factory in the province of Reggio Emilia, inside a house from the 1900s.
Very kind owner made us visit the vinegar factory, explained the production and aging process of balsamic vinegar, taste their products: from a vinegar aged 7 years to the top of 40 years .. Aged in barriques of different woods. the juniper which gives the vinegar a very particular and intriguing aroma.
Since I tasted their vinegar I just can't accept others, least of all the industrial ones.
Really good, when passion becomes professionalism!
If you pass by there do not miss it!
