I think it is one of the last pastures in Italy to make cheeses WITHOUT using industrial FERMENTS: at Tza never buy a first salt or a toma that has the same flavor, it can be said that every cheese here is UNIQUE because it depends only on what they eat goats. Nice and kind the 2 malgare, Eliana and Simona .... and also the goats!
