This is the most dedicated Taiwanese omelet that I have ever had since the historied breakfast store closed when I was a kid.nThey make very balanced flour cream and it just like making pancakes to spread on the pot then put an egg on the top, mix the flour and egg.nVery tender but solid omelet, the most important key is they adopted Japanese soy sauce to provide rich smell and texture. Most of breakfast store wouldn’t use because the cost will be higher.

Super slow. Didn't get chance to try it cause I didn't want to wait 30 minutes. Worst part was the cheese they were using was placed directly next to the trash can.nnEdit: to clarify, we were told 20 minutes, but when we came back in 20, there were still 8 people ahead of us. At least another 10 to 20 minutes wait.nnThe 1 star is because of the cleanliness. Fresh cheese next to the trash can is not sanitary.
