Amazing flour. Used the AP on everything from tortillas to pancakes. Great flavor and works well in any application. Used the Soft white on come cupcakes and they are perfect. Finally I use the Bread flour for my sourdough. Great rise and flavor. One important note you feel good after using this flour. You don't get the bloat you would from flour stripped of everything good. You won't be disappointed with any of their products.
The bread flour from Hillside is unlike anything in my bread-baking experience. It yields vibrant loaves that taste better than any I have ever made before. Whether using sourdough or yeast, in pagnotta, everyday sandwich bread or pizza crust, the resulting flavor is addictive, while the structural development is extraordinary. I cannot recommend this fresh high extraction flour highly enough.
Baking with Hillside Grain's various flours has been delicious. Chocolate chip cookies, made using the 10 or 12% hard red flour, have been slightly thicker, and chewier (which I prefer) than with APF. And it has worked well at 5,500 ft of altitude, no substitutions in recipe. These same flours also produce excellent pita, naan and assorted flat breads, with a depth of flavor that must be from the fresh, quality wheat.
