La Fabrik - Sucré salé

I live nearby and noticed that a pastry shop seemed to have taken up residence in rue de Mittelbach. These days, it's not easy to open such an establishment. So I said to myself that I was going to let myself be tempted and support this process and the courage that it takes to embark on such an adventure. So I tested the trompe l'oeil mushroom: meringue hat (I don't particularly like meringue, but it was very airy, delicious) and a foot which is a white chocolate sphere, filled with mousse. chestnut and candied clementines, which provide a very interesting bitterness to counterbalance the sugar of the mousse. On the side, a visually appealing little pistachio sponge cake. I also had a small bread (no debate between chocolatine and pain au chocolat) that was simply incredible: buttery as you wish, very finely crispy, airy, to the point of giving me the impression of never having eaten a croissant before. . Excellent pastry shop, easy to reach in Mulhouse center, by car or on foot, the savory concept is pleasantly surprising!
