I always give butcher shops a first try with ground beef. I figure if they can’t produce proper ground beef, their more expensive cuts won’t be worth the price, either. Bought some ground beef yesterday that they had pre-ground and vacuum sealed by the pound. Had my husband pick it up and when he got it home and I felt how squishy the package was, I knew I had your average supermarket-variety ground beef. Behaves (and probably tastes - I’m still cooking it) like the pink slime laden Walmart meat.nnWhen I shop at a real butcher shop, I expect the ground “beef” to tell me what was ground - chuck, sirloin, or round - this just says “ground beef”. And I expect it to be freshly ground on the premises. Freshly ground beef is crumbly right out of the package if you want it crumbled, but also sticks together beautifully for burger patties. This was such a disappointment. It was a block of squishy chunks that had to be broken up manually, just like Walmart meat, but for $1 a pound more cost. This is not butcher shop quality.nnI will not be trying any premium cuts due to this bad experience with the basics. Thank goodness this is just going in spaghetti sauce and not being made into a burger.

Customer service top notch. My mom is 76 and high risk for covid. She asked if they would bring her order out so she could be safe and they were very sweet to her. We never shopped there before this crisis...now we will be a regular customer!

Butchering instructions for a steer were pretty much ignored as far as thickness & amount of fat left on the steaks. For some reason, the London Brooks were cut into chunks. Aside from that, very clean & professional. Next time we will discuss the cuts with the butcher, not the person on the phone!
