Dickson's Farmstand Meats

I ordered the rice as an afterthought, frankly, but it actually stole the show. So flavorful, and such a good compliment to the chicken, which was also wonderfully seasoned and moist. I don’t know how one could improve on those waffle fries, either.nnOooooooonly teeny tiny thing is I wished they took the wishbone out of the chicken prior to roasting. Or is that a necessary structural component for rotisserie? I don’t know, but whatever, the food is great.

I’ve been ordering meats on Mercato since the lockdown, and Dickson’s has been the absolute best. Sausages, jerky, steaks and more - my family loves it all! Thank-you for coming all the way to Brooklyn for us❤ufe0f

Ha.nnDickson's has a huge footprint in the below street level of Chelsea Market. the name of the game at Dickson's is sustainability and sourcing from local farm to a slaughterhouse. you can get pre-prepared food here as well as your butcher needs fulfilled. You can order in-person--OR order for pickup or delivery via the Mercato, Caviar, and Postmates apps. the meats are on display in super clean displays. the butcher area is immaculate (no weird smells). the prepared food area is superclean as well. everything is displayed really clearly and you can choose your meats right from the case.nnthere's a lot of variety in the butchered items from various cuts of steak to different cow parts to chicken and various chicken parts to pork to lamb to rabbit and much more. there's also a variety of stocks (frozen/refrigerated) that you can purchase like chicken stock as well as beef stock. and let's be honest freshly made stock or brother is better than anything you will buy in a normal supermarket on-shelf. they even have a variety of animal fats from beef fat to duck fat to schmaltz (chicken) and more. if you're cooking and don't feel like rendering fat, slow-cooking stock or broth or looking for meat parts or bones not carried at most stores...Dickson's will probably have it.nnall that said, Dickson's is pricy. however you get what you paid for which is sustainable local meat which avoids a lot of the issues that arise with shopping at supermarkets for your animal protein needs. to me, it's worth it especially when i am buying things I can't find elsewhere.nnthe service is good and informative. the butchers know their stuff. like when I needed bone marrow cut into sections for some Risotto Alla Milanese that I made...they cut it right away as requested. this isn't just a retail spot...they do butcher meat here and cut things you purchase like into parts as you specify.nnthere are also offer classes on their website. never taken one, but they sound interesting.nndrops mic cuz this butcher is a cut above the rest
