Fantastic modern Japanese French dining experience. Authentic French course menu, however small part of hidden Japanese essence are well collaborated into every dishes.

First of all, I would like to think the outstanding staff of Nipponia Sawara, Including manager Satoru Yoshida, who made my stay exemplary. The hotels owned by this chain go to great efforts to take historic buildings and renovate them into comfortable, stylish boutique hotels while preserving elements of the original architecture. The 13 guest rooms are located in five different renovated buildings around Sawara, and the town itself is an extension of the hotel. Upon check-in, you’ll be given a map with a description of local restaurants and shops as well as a discount voucher. Chef Nakagawa also deserves special credit for his outstanding fusion of French cuisine with local Sawara and Chiba ingredients, balancing French and Japanese flavors delicately and with a light touch. Unsurprisingly, the wine list leans heavily towards French whites and reds.

Incredible Authentic Japanese Experience in Sawara Merchant Town. Our Japanese friends encouraged us to book this hotel. The hotel has a business model where they retrofit old properties to modern standards allowing for the upkeep of cultural sites. The manager of the hotel, Satoru Yoshida made the experience more enjoyable telling us the story of the place he manages, and many of the rooms available. In our case, our room was an old cotton warehouse renovated as shown in the pictures. To be inside the room and see the degree of care used in the retrofits, the modern bath, the wooden bathtub. The smell of wood inside the rooms is very soothing. We recommend the place for those looking for authenticity with a modern twist.

Would give 10 stars if I could An amazing experience overall. The hotel itself is incredibly well-designed and luxurious - the furnishings and layout really maximize the unique historical features. The manager (Satoru Yoshida) speaks perfect English and has a great personality, local knowledge and above-and-beyond service ethic. Dinner was one of the best we've had in a while - every single item on the menu was fresh, creative, delicious and contributed to a wonderful overall experience, along with the beautiful setting.
