James is a great guy to deal with, always friendly and glad to have your business. The only issue I had with my processing is I didn't get enough jalapeño sausage. That stuff is great! He vacuum packs and tenderizes the meat so it lasts long in storage and is tender when fried into CF steak. He has a miriad of options for processing and is very knowledgeable about processing. His prices seem right in line with other processors ($80 for basic steaks and hb meat at this time) so give him a try.nJust remembered he does gutting and trophy caping for additional fees, but doesn't do hogs.
